Lobster – a taste of autumn in Southern Norway

When the autumn storms sweep in over Southern Norway and the air turns crisp and clear, a special season begins for seafood lovers: lobster season.

On 1 October the lobster fishing season begins, and along the coast of Southern Norway lobster pots are lowered into the sea in hopes of a good catch. For many, it is more than just fishing. In Southern Norway, lobster fishing is a tradition, a source of pride, and a true taste of autumn.

After a busy summer filled with tourists, sunshine and life along the coast, the pace slows down a little. But the harbours are still lively, now filled with the scent of freshly cooked lobster, fresh prawns and world class seafood.

A delicacy from Southern Norway

Lobster is a true delicacy from the sea. The meat is tender and slightly sweet, with a flavour unlike anything else. It thrives in the cold, clean waters of the Skagerrak, which is why Norwegian lobster is considered among the very best in the world. In the past, lobster was known as the fishermen’s “black gold” in Southern Norway. It was exported in large quantities to England and France, where it was served in some of the finest restaurants. Today it remains just as sought after, but fortunately you can enjoy it right here at Fiskebrygga.

Seafood Delights at Reinhartsen

When the autumn season arrives, the counter at Reinhartsen is filled with fresh shellfish. Here you will find not only lobster, but also crab, lobster, mussels and prawns, all sourced from local fishing grounds. You can buy lobster live to cook yourself, or ready cooked and prepared to enjoy with fresh bread, mayonnaise and a crisp salad.

If you prefer to skip the cooking altogether, you can order ready made weekend seafood bags filled with shellfish. You can also enjoy seafood the Southern Norway way by ordering a lobster sandwich at the fish market at Reinhartsen.

1. Classic Boiled Lobster

The simplest, (and maybe the very best?) way to enjoy lobster.

  • 1 live lobster (about 500 to 700 g)

  • 3 litres of water

  • 50 g salt per litre of water

Bring the water and salt to a boil. Place the lobster quickly into the pot (make sure it is humanely killed first) and let it cook for 12–15 minutes depending on its size. Cool it quickly in cold water, preferably in an ice bath. Serve with lemon, mayonnaise and good bread.

Remember to make the most of the lobster. Save the shell and use it to make a rich stock, which is perfect as a base for a flavourful lobster soup later.

2. Lobster Salad on Brioche

Would you like to recreate Reinhartsen’s popular lobster sandwich at home? This is a luxurious twist on a classic seafood sandwich, perfect for a relaxed weekend treat.

  • Meat from ½ lobster

  • 2 tbsp mayonnaise

  • 1 tsp lemon juice

  • 1 tsp mustard

  • Fresh dill or tarragon

  • Crisp lettuce and brioche bread

Mix the lobster meat with mayonnaise, lemon juice and herbs. Serve it on toasted brioche with crisp lettuce. A true taste of Southern Norway at its best.
